Ingredients:

  • 4 Large Quails, cleaned and patted dry
  • 2 tablespoons olive oil, plus extra for brushing
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup mixed fresh herbs (rosemary, thyme, oregano), finely chopped
  • 1/2 cup Olives
  • 1/2 cup Borttane Onions
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Brush with Olive Oil: Brush the quails with olive oil, ensuring they are well coated to enhance crispiness and add a beautiful golden color during roasting.

  3. Prepare the Quails: Place the quails on a cutting board and season both the cavity and the skin with salt and pepper

  4. Herb and Garlic Rub: In a small bowl, mix minced garlic with the chopped fresh herbs. Rub this mixture generously over the quails.

  5. Stuff with Flavor: For an extra burst of flavor, stuff the quails with a small handful of halved cherry tomatoes and olives

  6. Truss the Quails: Optionally, truss the quails with kitchen twine to ensure even cooking and a neat presentation.

  7. Arrange in a Roasting Pan: Place the seasoned and stuffed quails in a roasting pan. Drizzle olive oil over the top.

  8. Add Tomatoes, Olives, and Onions: Scatter the remaining cherry tomatoes, olives, and onions around the quails in the roasting pan.

  9. Roasting Time: Roast the quails in the preheated oven for about 25-30 minutes or until they reach an internal temperature of 165°F (74°C). Ensure the skin is golden brown and crispy.

  10. Baste Occasionally: For added moisture and flavor, baste the quails with the pan juices occasionally during the roasting process.
