Ingredients

For the Pork Loin:

  • 1 Bistro-Style Berkshire Pork Loin (2.5-3 lbs, fully cooked)

  • 1 tbsp olive oil

For the Glaze:

  • 2 tbsp agave syrup

  • 2 tbsp marinade (your choice)

  • 1 tbsp soy sauce

  • 4 tbsp BBQ sauce

  • 1 tbsp mustard

  • A touch of truffle hot sauce (to taste)

For the Vegetables:

  • 8-10 small gold potatoes, left whole

  • 8-10 small whole carrots

  • 1 tbsp agave syrup

  • Salt & pepper (to taste)


Instructions

Step 1: Prepare the Vegetables

  1. Blanch the carrots: Bring a pot of water to a boil. Add the whole carrots and cook until just tender. Drain and set aside.

  2. Blanch the potatoes: Place the whole potatoes in a pot with cold or room temperature water. Bring to a simmer and cook until fork-tender. Drain and set aside in a bowl with the carrots.

Step 2: Roast the Pork Loin

  1. Preheat the oven to 400°F (200°C).

  2. Drizzle olive oil on a baking sheet and place the Bistro-Style Berkshire Pork Loin on top.

  3. Roast until the exterior turns golden and slightly crisp (about 10-15 minutes).

Step 3: Glaze the Pork Loin

  1. While the pork is roasting, whisk together all glaze ingredients in a small bowl.

  2. Remove the pork from the oven and brush generously with the glaze.

  3. Return to the oven and roast until the glaze caramelizes (about 5-7 minutes).

Step 4: Toss the Vegetables

  1. Toss the whole carrots and potatoes with agave syrup, salt, and pepper.

Step 5: Flip & Finish the Pork Loin

  1. Flip the pork loin over and brush the other side with glaze.

  2. Return to the oven and roast until the glaze caramelizes (about 5-7 minutes).

Step 6: Add the Vegetables & Final Roast

  1. Arrange the whole carrots and potatoes around the pork loin on the baking sheet.

  2. Optionally, brush another layer of glaze over the pork for extra color and flavor.

  3. Roast for another 5-7 minutes until everything is heated through and caramelized.

Step 7: Serve & Enjoy

  1. Remove from the oven and transfer the pork loin to a cutting board. Let rest for 5 minutes before slicing.

  2. Arrange the whole carrots and potatoes on a serving dish. Place the sliced pork loin on top.

  3. Drizzle the remaining glaze and pan juices over the pork.
