What the so-called medical and nutritional authorities are telling you is that processed meat like "salami" is bad for you. Given the nitrates and nitrites added as preservatives to regular mass-market salami that become nitrosamines in your system as you digest products that contain them are known to cause cancer, you should stay away from any processed meat products that contains them. What we are not being told is that fermented and cured meat products like traditional salumi, prosciutto, coppa and others are actually good for your gut and your health. The natural probiotics (typically lactobacillus) in the fermented meat will colonize in your gut and help to maintain and restore a healthy gut biome. Our pre-industrial ancestors ate a lot of cured / fermented meat since it was the only way to preserve it. Today, in many of the Blue Zones around the globe, centenarians happily enjoy cured and fermented meat products and live healthy lives into very old age.
We are being told that the "Mediterranean Diet" is the gold standard - what we are not being told is that cured and fermented (not processed) meat without added nitrates and nitrites such as Prosciutto di Parma, Jamon and Salumi made the old fashioned way (like Angel's Salumi) is a staple of the Mediterranean Diet in Sardinia, Italy and France as well as Spain. The centenarians in Okinawa don't eat beef - they eat pork for their main meat source.
Fermented foods in general are great for your gut! Sauerkraut, Kimchi, Kefir etc., along with fermented meat all contain good natural bacteria that helps to maintain a healthy gut biome which is 70% of your immune system.
Angel's cured meats do not contain any added nitrates or nitrites - eaten responsibly, they make a tasty treat that's good for your gut.
I love Angel's products and rarely leave reviews. I am a Stanford lawyer and have done a ton of research on Blue Zones, healthy aging and glucose / insulin management. My breakfast consists of a sandwich made from keto bread, Angel's Toscano Salumi, avocado, avocado-oil mayo and aged cheddar. My blood glucose levels do not change after eating that concoction of great tasting food!
I wish Angel's all the best! George Hartmann
This has now become a must have in my kitchen! I get the 1lb log and it doesn't take much to infuse any dish with white truffle. LOVE!
White Truffle Salami (6.5oz)
Nice sour salami with great flavor! Great fat to meat definition. Highly recommend if you want a that nice sour flavor. Not vinegar, but sour. It's awesome!
The Lonzino and Lomo from Angel's might be my favorite product they have to offer. A very tasty and tender cut of Berkshire Pork loin is seasoned to perfection and melts in your mouth. The Lonzino is seasoned with an herbs and spices blend, while the Lomo is seasoned with paprika, kind of like chorizo. Amazing!
I guess I should have saved a little piece to review on here for the taste, flavor, texture etc., but, it just didn't last that long. It got eaten! Delicious!
Really a nice snack to go along with a cold homebrew.
By far the best charcuterie meat I have ever had. Ive been buying it for years and it never fails to satisfy.
The Bison salami has great flavor and just melts in your mouth. I highly recommend!
Absolutely amazing, not many people have pork-free option, and everything got there on time and perfect. Was worried about special request to switch duck salami to bison salami due to pork casing on the duck one, and personalized note but they fulfilled both beautifully! 10/10 will recommend to anyone ❤️
This was a perfect addition to the charcuterie board I presented for a wedding! The guests loved the uniqueness of the Bison Salami! I would warn its a tad salty for some palates but overall its a great product!
Fantastic! And super helpful folks!
