  • 1 whole heritage chicken
  • 150g uncooked foie gras, sliced
  • Fresh cracked black peppercorn
  • Celtic salt (approximately 16g per kilo of foie gras)
  • Cognac
  • Fresh truffle, sliced and shaved
  • Chicken neck
  • 1 cup truffle juice
  • 1 cup white wine
  • 1 cup chicken stock
  • 1 cup heavy cream
  • Sous vide bag



Preparing the Foie Gras:

1. Slice the uncooked foie gras into pieces.

2. Season the foie gras with fresh cracked black peppercorn, Celtic salt, and drizzle with cognac. Set aside.

Preparing the Chicken:

3. Make an incision on the side of the chicken to get under the skin and on top of the breast.

4. Sprinkle Celtic salt, truffle slices, and then insert the seasoned foie gras under the skin.

5. Place shredded truffle, a couple of pieces of foie gras, chicken neck, fresh cracked peppercorn, and Celtic salt inside the chicken.

6. Tie the chicken legs together to secure the stuffing.

7. Season the outside of the chicken with fresh cracked black peppercorn and Celtic salt.

Sous Vide Preparation:

8. Place the prepared chicken in a sous vide bag.

9. Add truffle juice, cognac, white wine, and chicken stock to the bag.

10. Add shaved truffle, fresh cracked black peppercorn, and Celtic salt to the bag.

11. Vacuum seal the bag securely.

Cooking Process:

12. Preheat the sous vide bath to 150 degrees Fahrenheit.

13. Place the sealed chicken in the bath and cook for 6 hours.

Finishing Touch:

14. After cooking, pour the juices from the bag into a saucepan.

15. Reduce the juices over medium heat and add heavy cream, creating a thin sauce consistency.
