Maison Crayssac's Black Summer Truffle Peelings are made using Black Truffles harvested at the end of Summer. In the Perigord region of France, Summer means truffles with a more subtle taste than Winter varieties. The truffles are cleaned and sliced, then steamed and preserved with truffle juice and sea salt. These peelings offer a earthy flavor with mushroom undertones. Truffle peelings make for the perfect alternative to fresh truffles when the season has nothing to offer.
