Comté, made from cow's milk, is an Alpine cheese similar to Swiss Gruyère but made across the border in the French Jura region. This is a handmade, artisan cheese with a tight-knit texture and satiny body. Flavors vary in intensity based on the season, production techniques, and most importantly, age.
This 18-Month Reserve from Seignemartin is sharp and strong on the nose, yet smooth and creamy on the palate. Features notes of apricot, hazelnuts, and toffee. Comté is a wonderfully versatile cheese, equally great for snacking and cooking.
